Classic Spaghetti Carbonara

A traditional Roman pasta dish made with eggs, cheese, pancetta, and black pepper. Rich, creamy, and absolutely delicious.

Ingredients

  • 400 g spaghetti
  • 200 g pancetta or guanciale
  • 4 large eggs
  • 100 g Pecorino Romano cheese, grated
  • to taste black pepper
  • to taste salt

Instructions

    Bring a large pot of salted water to boil and cook spaghetti until al dente.

    While pasta cooks, cut pancetta into small cubes and fry until crispy.

    In a bowl, whisk eggs with grated cheese and plenty of black pepper.

    Drain pasta, reserving some cooking water.

  5. 5

    Toss hot pasta with pancetta, then remove from heat.

    Add egg mixture and toss quickly, adding pasta water if needed.

    Serve immediately with extra cheese and pepper.
